Latitude 10 Resort's Chickpea & Watermelon Salad with Passionfruit Dressing

We’re not sure, but it’s delicious, healthy and can’t hurt…especially on days when you need a tropically infused pick-me-up to hold you over until your next beach trip to Latitude 10 Resort.
2 spoonfuls of dark brown sugar or palm sugar
180 ml of EVOO
1 Tsp of Dijon Mustard
Crack open the Passionfruits and scoop out their seeds and flesh. Combine in a blender with sugar and dijon. While blender is running, pour in EVOO in a steady stream to emulsify. Dressing should be thoroughly blended after 30 seconds. Taste and season with S&P to your liking. Dressing should be acidic and tangy but not overly sour.
Chickpea & Watermelon Salad
1 cup of watermelon, seeded & cubed to a 1/2 inch
1 cup of seeded and cubed cucumber
1/2 a Green pepper, roasted to remove skin & cubed
1/2 cup of almonds, sliced & toasted
1 15 oz can of chickpeas, drained
1/3 cup of feta cheese, crumbled
1 handful of mint, chopped
Mix together all ingredients and toss with the dressing. Serve immediately and enjoy beachside if possible. This will serve about 4 people as a starter or side.
